# Mark Al-Shemmeri

My coffee journey began in 2011 working as a barista at The Plough in Harborne, Birmingham, serving delicious Hasbean coffee. Dialling in the Slayer each morning was a ritual. I was studying for a Masters (MEng) in Chemical Engineering at the University of Birmingham at the time, so the coffee job was part-time during term, picking up more hours during the breaks.
After university, I went on to production at two craft beer breweries (Purity Brewing Co. for 2 years; Magic Rock Brewing Co. for 1 year), applying chemical engineering principles to production and continuous improvement of manufacturing and quality systems. I always sought out the analytical solution to understand how changing the ways of working impacted the beer’s flavour profile. This inevitably led me back toward a more analytical, research focused role.
I then became a Research Engineer in the Formulation Engineering Centre for Doctoral Training based out of the School of Chemical Engineering at the University of Birmingham. I worked toward an Engineering Doctorate (EngD) sponsored by JDE Peet's and the Engineering and Physical Sciences Research Council (EPSRC). So back working with coffee, but from a very different perspective. My research explored the fundamental heat and mass transfer phenomena needed to model and simulate process and product changes during coffee roasting using data-driven approaches that involved extensive experiments with various roasting technologies. All of my research is publicly available in several shapes and forms.
