two coffees from finca el zorro azul out of risaralda, colombia. both natural-processed, with a well-timed fermentation and controlled drying.
the difference between the two is the cultivated variety. 25001 is a yellow caturra; 25002 is an orange wush wush.
now, caturra has its roots in brazil, whilst these days it is common across central america. wush wush was found in ethiopia, yet again, finds itself these days mostly in colombia.
as for flavour, these are definitely in a similar flavour space in terms of acidity, roasty/bitterness and even fruitiness. however, the yellow caturra has delicious flavours that remind me of fruity blackberry jam and floral jasmine tea. the wush wush is something else entirely. is it apricot? gooseberry? cucumber? papaya? i have tasted this so many times and it feels like a different fruit comes to mind each time - it’s a complicated one!

Since 2018, I have joined Liliana and Didier at El Zorro Azul. This shared journey, leveraging the experience of Liliana and Didier, focuses on growing excellent coffee while respecting the local community and environment. Together, we started revitalizing the farm. We planted new coffee varieties like Yellow Caturra, Gesha, and Wush-Wush, along with shade trees to boost biodiversity. Yellow Caturra was planted in plots with gentle winds and morning sun, while other varieties, particularly Gesha, Wush-Wush and Laurina thrive in a bit more shade, just like they would in their native environments. We prioritize soil health with nitrogen-fixing trees, and processing quality with a new wet mill and on-site fertilizers. Organic pest control and agroecology guide resource management and biodiversity support. These yellow caturra cherries are floated to sort ripe cherries, kept in a sealed bag overnight, then cherries are patio-dried for 20 days. a sliding roof covers the coffee during peak daytime temperatures to avoid overheating.
