Since 2018, I have joined Liliana and Didier at El Zorro Azul. This shared journey, leveraging the experience of Liliana and Didier, focuses on growing excellent coffee while respecting the local community and environment. Together, we started revitalizing the farm. We planted new coffee varieties like Yellow Caturra, Gesha, and Wush-Wush, along with shade trees to boost biodiversity. Yellow Caturra was planted in plots with gentle winds and morning sun, while other varieties, particularly Gesha, Wush-Wush and Laurina thrive in a bit more shade, just like they would in their native environments. We prioritize soil health with nitrogen-fixing trees, and processing quality with a new wet mill and on-site fertilizers. Organic pest control and agroecology guide resource management and biodiversity support. These orange wush wush cherries are floated to sort ripe cherries, kept in a sealed bag overnight, then cherries are patio-dried for 20 days. a sliding roof covers the coffee during peak daytime temperatures to avoid overheating.
