both 25003 and 25004 are caturra cultivars from luz helena salazar out of finca maracay, quindio, colombia, supplied via cofinet.

cofinet are often known for their innovative, high intervention process-driven coffees that produce wildly diverse flavours, however these coffees are examples of their ability to excel via conventional processes.

the washed-processed coffee was hand sorted, depulped and gently dried, resulting in a sweet, floral and super drinkable cup. the natural-processed is a result of low intervention, high attenuation fermentation that yielded complex flavours of turkish delight and cherry vanilla.

it’s always fun to see the diverse flavour profiles possible from the same starting material. exploring the effects of post-harvest processing here shows how a floral, juicy washed-processed coffee can be transformed unrecognisably into a mouthful of forest fruit jam!

Luz Helena is the mother of Carlos and Felipe, the co-founders of Cofinet, and wife of Jairo Arcila. The family have positioned themselves as leaders of the coffee industry and this includes Luz Helena, who has simultaneously learned her craft alongside her husband and sons, focusing on specialty coffee, improving farming practices and dealing with common challenges such as insects and optimising ripeness. This coffee was carefully hand-picked in order to select only the ripest cherries and then hand sorted to remove any defects. The coffee was sundried on raised beds in temperature controlled conditions until the ideal moisture content is achieved.
